If you’ve been to the South, but never been to a swamp shack, well…. you haven’t truly been to all the South. I mean at a swamp shack the ‘gators don’t do the eating, they get eaten, much to their own chagrin. Now Buzzard Billy’s is not unique to Waco, it’s something of a chain, and it is a chain that has roots in Cajun and Creole country, and the cooking down on the Bayou and in New Orleans. Can you hear the Creedence Clearwater music now?? Anyway, on one of my last days in Waco, me and my buddy Bruce Longenecker aka the Bruester, rendezvoused at Buzzard Billy’s on the Brazos for some fine eatin. We had armadillo eggs aka bacon wrapped chicken balls stuffed with a small jalapeno (not too hot, just right). You dip em in ranch dressing, and you are in armadillo heaven….

This course came with fried pickles (i.e. dill chips) also to be dipped in ranch dressing… and equally yummy. Then, in the mode of all appetizers all the time, we moved on to the fried gator strips… which also come with ranch dressing (there’s a theme here)….bb1

Now this was a hard choice, cause we could have had the crawfish etouffee or the gumbo….

There was the jambalaya as well….so many choices, so little time. It was nice to just sit on the Brazos River, hummin ‘rollin on the river’……BB3

Eventually, in a lollygaggin kind of way, we got around to the genuine N’orleans bread pudding with sauce of course….bb6

After all that… we had to be hauled out of Buzzard Billy’s in wheel barrows to our cars…. a good time was had by all. Too bad we couldn’t have had a more caloric meal than that one 🙂
