Thoughts for Thursday–New Pope Edition

What am I cooking for dinner tonight?Skillet sage and thyme chicken thighs, brown rice, and a green salad.  This is simple and easy, a recipe I adapted from several on the internet.  Rub chicken with salt and pepper then dredge it in a mixture of flour (1/2C.), salt (1/2 t.), sage (1/2 t.) and thyme (1/2 t.)  Heat ~1/4C. olive oil in a pan and fry the chicken until done.  Serve over rice with drippings.  Yum!  My whole family loves it--even the baby.  Chicken thighs are so moist and tasty- … [Read more...]

Thoughts on Thursday

I am not following the format, but here are a few things rattling around in my head:1.  I have loved reading to my kids over the past six weeks or so.  We have read Heidi and The Little Princess, and now we are starting Tom Sawyer.  With the latter two, I was moved to tears at some times by the beautiful messages of books which were favorites from my childhood.  I was even reading from my own copies -- thanks mom and dad for saving them! -- and I know that I took things away from the stories … [Read more...]

This little boy is celebrating his 5th Birthday today!  5 years ago today, Augustine Daniel Miller (Gus), entered this world just before midnight.  Born on what would have been his great grandfather's 98th birthday (my grandfather only lived to 96!), we went with Daniel as a middle name in honor of my grandfather.  Gus arrived after a very short labor, and he was enormous!  When they put him on the scale, it read 10. 13.  My husband asked, "is that the time?"  I'll never forget the look on the mi … [Read more...]

What am I cooking?Last night I made a Shepherd's Pie for a dear friend who is in the throes of morning sickness with her seventh pregnancy. I saved enough meat and frozen veggies to make us a family-size one tonight -- I will just have to whip up fresh mashed potatoes for the top. Thoughts for Thursday

What am I cooking?  Fajitas!  Chicken, peppers, onions, black beans, homemade salsa (still have some Jersey tomatoes!), lettuce, and cheese.  This is a real kid favorite in our home, and Thursday is the one night a week we don't rush out the door to an evening activity.What are my weekend plans?  Soccer, two games.  Farmers Market.  Time with cousins (Mr. Red's sister has 5 children of similar ages to mine and that always makes for a fun day).What are my prayer intentions for the day?  For a … [Read more...]
