Never fear: the lovely magazine Kinfolk is publishing some road trip recipes, designed to make your travel a little less greasy and a bit more beautiful. Here’s their easy (and easily adaptable) recipe for Sicilian empanadas:

These Sicilian Empanadas can be baked the night before departure. The olive oil pastry is light and crunchy, and when broken open they’re a mouthful of lemony, smoky fish and broccoli. Perfect for a picnic by the roadside.
