Meat, veggies and rice November 23, 2009

This is a recipe that I found online and adapted a bit. I love the flavor of this one, and it is pretty easy to throw together too. I am sitting in my kitchen smelling it cook, so I thought I’d post it up here. 🙂

3 lbs meat (Anything, I usually use a chicken or a tray of stew meat)
3/4 cup chicken broth
1/4 cup apple cider vinegar
1 T cumin
1 tsp smoked paprika
1 tsp salt
1/2 tsp black pepper
1 large onion, chopped
2 or 3 red bell peppers, chopped
3 med yellow apples chopped
3 stalks celery, chopped
3 cloves minced garlic

The Directions.

Use at least a 5 quart crock-pot.

Combine all of the dry spices in a bowl. Put the meat into your crockpot. Dump the spices on top.
Coarsely chop the vegetables and add to the pot. Mince the garlic and chop the apples and add.
Add the chicken broth and vinegar.
You don’t need to stir it or anything.

Cover and cook on low for 10 hours, or on high for 6-7.

Check about 2 hours before serving to see if you can shred the meat with forks. If you can’t shred the meat, cook for longer, or remove the meat and cut in long slices, then return to the pot.

Debone the meat (if needed) shred and stir back into the crock-pot.

Serve over brown or white rice, with a ladle full of broth.
