Bright Blessings Corn Chowder Recipe August 2, 2015

It is the time of year where it doesn’t matter if you never lifted a hoe, or tilled a field, the bounty of harvest is all around. Traditionally celebrated as Lammas or “Loaf-mass,” the days surrounding August 1st were an early holiday to celebrate the earth and it’s gifts. Dancing, singing, and merriment were the order of the days. Pagan altars at this time feature stalks of wheat, corn, and other representations of nature’s fruitful abundance.

Corn is one of my favorite foods. Honestly, I would eat it everyday if I could. To me corn is both simple and sensual, and it’s magickal possibilities are plenty. Here on Voodoo Universe I have featured my favorite recipes for such delights as Corn Maque Choux and more to please the ancestors and yourself. Corn has been used magickally throughout the ages for fertility, healing, success, and more. This recipe combines the sweet flavor of summer corn to make a savory meal, it can be eaten at Lammas (Lughnasadh) or anytime to enjoy these delicious blessings. Bright Blessings Corn Chowder Recipe

5 ears fresh corn, grilled or boiled

1 small red onion, diced

1 red pepper, seeded and diced

1 cup chicken, cooked and shredded

1 tsp. Fresh thyme, minced

1 tsp. Fresh basil, minced

1 tsp. Fresh parsley, minced

1 Tbs. Butter

2 cups chicken broth

2 cups almond milk ( or use ½ and ½ if you prefer)

 

Cut corn from the ears. Melt butter in a saucepan over low heat. Add onion and cook until they begin to soften, then add the peppers. Finally add the chicken and corn and cook two minutes more. Then add the broth, milk and fresh herbs. Cook over low heat for 45 minutes to an hour, stirring gently and making sure it does not boil. Serve immediately. Makes 3-4 servings.
