There are few things better on a brisk, chilly day than a bowl of piping hot soup. \u00a0It\u2019s hearty and delicious and warms one from the inside out, which is why soups are my favorite culinary creations come wintertime!<\/p>\n

Even better than soup is the mighty slow cooker, turning an evening dinner task into an all-day savory affair. \u00a0I just love popping the ingredients in in the morning, smelling the aroma throughout the day, and reaping the benefits come dinner, when I have little to prepare! \u00a0The slow cooker is really a mother\u2019s dream.<\/div>\n

So here\u2019s a two-for-one for you\u2013a Crock Pot creation and soup\/stew du jour from our home to yours. \u00a0We\u2019ve feasted on this soup for years now, serving it to guests in a bread bowl or hoarding it for ourselves and saving some for later. \u00a0Whatever you choose, you\u2019ll definitely enjoy!!<\/div>\n

Rich Beef and Barley Soup<\/span><\/span><\/div>\n
(adapted from an original recipe in\u00a0The Biggest Book of Slow Cooker Recipes<\/span>, Better Homes and Gardens, 2002<\/span>)<\/span><\/span><\/div>\n
1\/2 lb. ground beef<\/div>\n
1 C. chopped carrots<\/div>\n
1 C. chopped celery<\/div>\n
1 med. onion, chopped<\/div>\n
4 C. beef broth<\/div>\n
14.5 oz. can cut tomatoes (Italian style works well)<\/div>\n
1 C. spaghetti sauce<\/div>\n
2\/3 C. pearl barley<\/div>\n
1 1\/2 tsp. dried basil<\/div>\n
1\/2 tsp. salt (or less)<\/div>\n
1\/4 tsp. black pepper<\/div>\n

Brown ground beef, drain, and place in cooker. \u00a0Add rest of ingredients and stir. \u00a0Cover and cook on low for 9-10 hours or on high for 4-5. \u00a0Serve with warm bread and salad. \u00a0Makes 6 servings (usually with leftovers!)<\/div>\n<\/body><\/html>\n","protected":false},"excerpt":{"rendered":"
