Let me just skip you straight to the Wikipedia citation for champagne, complete with footnotes for you to follow up on:<\/p>\n

Contrary to legend and popular belief,\u00a0Dom P\u00e9rignon<\/a>\u00a0did not invent sparkling wine, but he did make important contributions to the production and quality of Champagne wine.[6]<\/a><\/sup>[7]<\/a><\/sup>\u00a0The oldest recorded sparkling wine is\u00a0Blanquette de Limoux<\/a>, which was apparently invented by Benedictine Monks in the Abbey of Saint Hilaire, near Carcassonne in 1531.[8]<\/a><\/sup>\u00a0They achieved this by bottling the wine before the initial fermentation had ended.<\/p>\n

Skipping over to the citation for Blanquette de Limoux, we learn the following,<\/p>\n

Records show that\u00a0Livy\u00a0traded in non-sparkling white wines from Limoux as far back as the Roman occupation of the region.<\/p>\n

Blanquette de Limoux is considered to be the first sparkling white wine produced in\u00a0France, created long before the\u00a0Champagne\u00a0region became world renowned for the\u00a0sparkling wine Champagne. The first textual mention of \u201cblanquette\u201d, from the\u00a0Occitan\u00a0expression for \u201cthe small white\u201d, appeared in 1531 in papers written by\u00a0Benedictine monks\u00a0at an abbey in Saint-Hilaire. They detail the production and distribution of Saint-Hilaire\u2019s blanquette in\u00a0cork-stoppered\u00a0flasks. The region\u2019s location, north of the\u00a0Cork Oak\u00a0forest of\u00a0Catalu\u00f1a, gave Limoux producers easy access to the material needed to produce\u00a0secondary fermentation\u00a0in the flask, which\u00a0produces the bubbles\u00a0necessary for sparkling wine.[1]<\/a><\/sup><\/p>\n<\/blockquote>\n
