On my quest to find viable Paleo desserts, I hit the jackpot tonight with this recipe, originally titled \u201cMexican Chocolate Coffee Cake.\u201d\u00a0 (However, I halved the amount of cayenne pepper, so I didn\u2019t detect as much of a \u201ckick\u201d as other reported!)<\/p>\n

Servings:<\/strong> 10-14<\/p>\n

Ingredients:<\/strong> 6 eggs
\n\u00bd cup extra virgin coconut oil, melted
\n1\/3 cup + 1 Tbsp coconut flour
\n1\/3 cup natural or raw cocoa powder
\n3 oz unsweetened baking chocolate (100%)
\n\u00bd cup molasses
\n\u00bd cup honey
\n2 tsp vanilla
\n\u00bd tsp salt
\n\u00bd tsp baking soda
\n1 tsp cinnamon
\n\u00bd tsp cayenne pepper, to taste<\/p>\n

Instructions:<\/strong><\/p>\n

1. Preheat oven to 325F. \u00a0Line 5\u201dX9\u201d loaf pan with wax paper. \u00a0Grease wax paper with coconut oil.
\n2. Sift cocoa powder, coconut flour, cinnamon, cayenne, salt and baking soda into a small bowl.
\n3. In a food processor or blender, combine eggs, honey, molasses, and vanilla. \u00a0Pulse a few times to beat together. \u00a0Add melted coconut oil and process\/blend for 1 minute.
\n4. Add dry ingredients to food processor, and pulse to combine.
\n5. Pour batter into prepared loaf pan and bake for 1 hour (not a very forgiving cake if you burn it, so you might want to test for \u201cdoneness\u201d with a toothpick at the 50-55 minute mark).
\n6. Let cool completely in the pan. \u00a0Remove from pan and carefully remove wax paper.<\/p>\n

So\u2026\u00a0 how was it?<\/strong> The original recipe said this cake was good enough not to miss the icing, but I always<\/em> miss the icing.\u00a0 To solve that issue,\u00a0 I drizzled 85 % Green & Black Chocolate<\/a> on top.\u00a0 Also, I didn\u2019t wait for it to cool completely, but ate the warm and gooey cake right out of the oven.\u00a0 Delicious!\u00a0 My daughter and I were very pleased with the texture, the taste, and the look of this cake. The cinnamon and cayenne gives it a little \u201ckick,\u201d and it will satisfy any chocolate cake craving which might sneak up on your weaker Paleo days.<\/p>\n
