I haven\u2019t posted a recipe in a while, but here\u2019s dinner tonight. \u00a0I call this \u201cCheater\u2019s Fried Rice\u201d because it takes so many shortcuts that it only vaguely resembles the original, but it\u2019s another in my collection of kid-friendly meals. \u00a0This is also a rare instance of a no-recipe meal in my rotation. \u00a0But here goes:<\/p>\n

1. \u00a0Prepare 3 rice-cooker-cups of rice. \u00a0If you don\u2019t have a rice cooker, then I suppose step one is actually \u201cbuy a rice cooker, preferably one with a timer\u201d because they\u2019re extremely useful even if you don\u2019t cook much Chinese food. \u00a0You can also cook barley, for beef barley stew, in it. \u00a0I don\u2019t know if they\u2019re all this way, but mine is non-stick, which is great, because I always used to hate dealing with rice being over- or under-cooked and sticking to the pot. \u00a0For regular fried rice, you\u2019re supposed to use cold rice, but I don\u2019t, because I don\u2019t plan that far ahead. <\/p>\n

2. \u00a0Cook a 16 oz bag of mixed vegetables. \u00a0Microwave is fine. \u00a0Drain.<\/p>\n

3. \u00a0Cut up a package of smoked sausage \u2014 we use turkey sausage to dial down the calories. \u00a0To get small pieces, I cut each piece in half lengthwise, then each half in thirds lengthwise again, then cut into bite-sized pieces, but you can figure this out.<\/p>\n

4. \u00a0Put some oil in the pan, and fry up the smoked sausage. \u00a0Then add the veggies and the rice and mix together, adding more oil as needed.<\/p>\n

5. \u00a0Last step \u2014 the two nontraditional ingredients. \u00a0This was my husband\u2019s innovation because he doesn\u2019t like traditional soy-sauce fried rice. \u00a0Add a dollup of teryaki sauce (maybe a couple tablespoons) and a smaller dollup of molasses to sweeten it.<\/p>\n

So this is clearly a kid- rather than adult-friendly dish, but even my picky eater (coincidentally named Mikey) loves it. \u00a0And if you get the rice-cooker started, you can cook this up pretty quickly.<\/p>\n
