In today\u2019s Trib:\u00a0 an article<\/a> on the ins and outs of tipping.<\/div>\n

And here\u2019s what bugged me about the article and\/or the reality that it describes (assuming that it describes a reality that\u2019s not just limited to upscale restaurants or certain regions or localities):<\/p>\n

First, of all, the statistics.<\/p>\n

Technomic, the Chicago-based food industry consultancy, released a study in August that showed how diners tip. The company surveyed restaurant customers across the country and found that at full-service, sit-down restaurants:<\/p><\/blockquote>\n

1%: Don\u2019t tip
16%: 10 percent or less
26%: 11-15 percent
44%: 16-20 percent
13%: 21 percent or more\u00a0<\/p><\/blockquote>\n

At fast-casual restaurants (Portillo\u2019s, Panera Bread, etc.), respondents say they\u2019re less likely to tip and\/or tip less:\u00a0<\/p><\/blockquote>\n

32%: Don\u2019t tip
16%: 10 percent or less
26%: 11-15 percent
24%: 16-20 percent
9%: 21 percent or more\u00a0<\/p><\/blockquote>\n

At buffets and cafeterias, nearly half of diners tip 10 percent or less, if at all:<\/p>\n

21%: Don\u2019t tip
27%: 10 percent or less
14%: 11-15 percent
12%: 16-20 percent
4%: 21 percent or more\u00a0<\/p><\/blockquote>\n

At fast-food restaurants, 81 percent of diners say they don\u2019t tip. <\/p><\/blockquote>\n

Do you buy these statistics?<\/p>\n

There is no tipping at \u201cfast-casual\u201d restaurants. \u00a0At some such restaurants (Panera), the staff takes your order at a register, and you pick it up at a counter. \u00a0At others, you order at a counter, staff brings your food and clears the table. \u00a0There is no \u201cservice\u201d \u2014 no \u201chow is everything?\u201d or \u201ccan I get you another pop?\u201d (or even a first pop, to begin with). \u00a0Right? \u00a0This isn\u2019t a strange thing that I\u2019ve missed? \u00a0Why would you tip?<\/p>\n

Sure, at a traditional buffet, it\u2019s expected to tip, just a smaller amount \u2014 because they do bring your drinks, clear your plates, and take your payment at the table. \u00a0But not at a cafeteria, or a cafeteria-type buffet.<\/p>\n

And 19% of diners tip at a fast food restaurant? \u00a0Who? \u00a0Why? \u00a0Or are they cooking the data to try to persuade people to tip more frequently and more generously?<\/p>\n

Second, the article claims that not even okay to reduce the tip for poor service, because, the reporter says, it\u2019s common for the first 10% of the tip to be allocated to the busboys and other staff \u2014 meaning that, in terms of acceptable etiquette, the notion of a tipping system as a motivator for good service has been abandoned.<\/p>\n

So what\u2019s the answer? \u00a0The article suggests moving to a standardized 20% service charge. <\/p>\n

How about, instead, just factoring service into the cost of the meal, or maybe a flat cuperto like in Italy? <\/p>\n

Of course, that would entail raising the prices by 20%, and would scare away customers who are used to the lower, but only artificially lower, prices without tip. \u00a0I suppose restaurants could show two columns, with and without service charge, for the math-impaired.<\/p>\n

But isn\u2019t it kind of irritating that we\u2019re trapped (in a path-dependency sort of way) in a really stupid tip system? \u00a0The Germans don\u2019t do it \u2014 \u201ctipping\u201d consists mostly of rounding up, and largely because, at least in our experience, and maybe this has changed, the waitress calculates the bill on the spot (doing more math than your typical American) and gets paid in cash. <\/p>\n<\/body><\/html>\n","protected":false},"excerpt":{"rendered":"
