the recipe my sister in law taught me the last time she was here visiting, but with my tweaks. \u00a0The thing is, there isn\u2019t any measurements for the ingredients aside from the Bechamel Sauce. \u00a0So, I will give you the recipe I used with my pictures, but you have to gauge the amounts for your own pans. \u00a0\ud83d\ude42<\/p>\n<p>\u00a0<\/p>\n<p>Moussaka<\/p>\n<p>1 1\/2 lb lean ground beef<\/p>\n<p>1\/2 onion<\/p>\n<p>1\/2 green pepper<\/p>\n<p>(saute together, drain, rinse, then mix with salt, pepper and garlic powder and put aside)<\/p>\n<p><a href=\"https:\/\/wp-media.patheos.com\/blogs\/sites\/734\/2011\/08\/img00894-20110801-1658.jpg\" class=\" decorated-link\" target=\"_blank\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-328\" title=\"IMG00894-20110801-1658\" src=\"https:\/\/wp-media.patheos.com\/blogs\/sites\/734\/2011\/08\/img00894-20110801-1658.jpg?w=300\" alt=\"\" width=\"300\" height=\"225\"><\/a><\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p>3 eggplants<\/p>\n<p>(slice and lay out, salt and let drain (wait about 15 minutes and then flip and salt and drain the other side))<\/p>\n<p>Just before you layer, you will rinse the salt off, and pat the eggplant dry with towels.<\/p>\n<p><a href=\"https:\/\/wp-media.patheos.com\/blogs\/sites\/734\/2011\/08\/img00893-20110801-1658.jpg\" class=\" decorated-link\" target=\"_blank\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-323\" title=\"IMG00893-20110801-1658.jpg\" src=\"https:\/\/wp-media.patheos.com\/blogs\/sites\/734\/2011\/08\/img00893-20110801-1658.jpg?w=300\" alt=\"\" width=\"300\" height=\"225\"><\/a><\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p>While you are waiting on the eggplants, make the bechamel sauce.<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p>Bechamel<\/p>\n<p>2 c milk<\/p>\n<p>1 c chicken broth<\/p>\n<p>5 T corn starch<\/p>\n<p>Bring the Milk to a scald, mix the corn starch and cold chicken broth into a slurry and stir into the milk. \u00a0Let it thicken (about 5 minutes) stirring continuously. \u00a0Salt to taste. \u00a0Let this set and cool.<\/p>\n<p><a href=\"https:\/\/wp-media.patheos.com\/blogs\/sites\/734\/2011\/08\/img00896-20110801-1659.jpg\" class=\" decorated-link\" target=\"_blank\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-329\" title=\"IMG00896-20110801-1659\" src=\"https:\/\/wp-media.patheos.com\/blogs\/sites\/734\/2011\/08\/img00896-20110801-1659.jpg?w=300\" alt=\"\" width=\"300\" height=\"225\"><\/a><\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p>After it gets to room temperature, mix 2 large eggs into the bechamel. \u00a0If you can\u2019t wait for it to cool, temper the eggs before adding it to the hot sauce or they will scramble and you will have to start over!<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p>Peel enough potatoes \u00a0to make 2 layers and slice them about the same size as the eggplant. \u00a0Let them rest in cool water so they don\u2019t turn brown while you are preparing to layer.<\/p>\n<p>I used a 9\u00d712 ceramic pan.<\/p>\n<p>Layer eggplant + potato + ground beef mixture (repeat) then top with Bechamel. \u00a0Sprinkle with Paprika if you like.<\/p>\n<p><a href=\"https:\/\/wp-media.patheos.com\/blogs\/sites\/734\/2011\/08\/img00897-20110801-1815.jpg\" class=\" decorated-link\" target=\"_blank\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-330\" title=\"IMG00897-20110801-1815\" src=\"https:\/\/wp-media.patheos.com\/blogs\/sites\/734\/2011\/08\/img00897-20110801-1815.jpg?w=300\" alt=\"\" width=\"300\" height=\"225\"><\/a><\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p>Bake at 375 oven for about an hour. \u00a0Test with a knife to see if the potatoes are done.<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p><a href=\"https:\/\/wp-media.patheos.com\/blogs\/sites\/734\/2011\/08\/img00900-20110801-2054.jpg\" class=\" decorated-link\" target=\"_blank\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-331\" title=\"IMG00900-20110801-2054\" src=\"https:\/\/wp-media.patheos.com\/blogs\/sites\/734\/2011\/08\/img00900-20110801-2054.jpg?w=300\" alt=\"\" width=\"300\" height=\"225\"><\/a><\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p>Khaled mentioned that the Bechamel should have been thicker, so if you like that thick layer, you might want to double the recipe. \u00a0Also, by rinsing the salt off of the eggplant, it will not retain any saltiness so keep that in mind if your family likes their food salty and adjust the salt levels in the beef and bechamel. \u00a0By not frying the eggplant and potatoes before assembly, this lightens up the recipe for those of us who don\u2019t like heavy foods, but it adds to the cooking time by about 20 minutes.<\/p>\n<p>\u00a0<\/p>\n<p>We also made Sr. Becky\u2019s No Bake Cookies for dessert while the Moussaka was baking. \u00a0They were cooled off and ready to eat by the time we got to the end of dinner.<\/p>\n<p>\u00a0<\/p>\n<p>Before Iftar, I took the girls to deliver our first food gifts of the season! \u00a0We made loaves of bread on Sunday night and took a loaf to our backyard neighbors. \u00a0It\u2019s funny because in the 3 years that that house has been owned by this family, we have been exchanging food with them every Ramadan. \u00a0This last spring, the Grandma and Grandpa moved out, along with the parents and children we had become friendly with and a new set of people moved in. \u00a0They are related somehow to the previous tenants, so I made the assumption that they too would be celebrating Ramadan, but when we took the loaf of bread over they were perplexed. \u00a0We will see what happens next.<\/p>\n<p>\u00a0<\/p>\n<p>The second loaf was delivered to a new friend who coincidentally, lives on the same street as me! \u00a0It\u2019s completely cool how we met and found out that we live on the same street (I will get permission before I share the deets) but I ushered the ladies in the car and we drove the 1\/2 block down to her house (to save time, we aren\u2019t really that lazy) and knocked on her door. \u00a0I didn\u2019t know if she was home, but by the cars in the driveway it was hopeful. \u00a0We waited a few minutes and then knocked again just in case, and New Friend opened the door! \u00a0YAY! \u00a0She was soo surprised and it was TOTALLY Awesome. \u00a0I love this tradition we have going on so much.<\/p>\n<p>\u00a0<\/p>\n<p>So, today we have leftovers for Iftar. \u00a0I\u2019m going to assemble and cook a breakfast\u00a0casserole\u00a0for my Suhoor eaters and take my peeps to the zoo before the rain hits. \u00a0I will share the recipe with my tweaks
