{"id":615,"date":"2011-09-13T05:00:41","date_gmt":"2011-09-13T09:00:41","guid":{"rendered":"http:\/\/eatwithjoy.org\/?p=615"},"modified":"2011-09-13T05:00:41","modified_gmt":"2011-09-13T09:00:41","slug":"tuesdays-with-fannie","status":"publish","type":"post","link":"https:\/\/www.patheos.com\/blogs\/rachelmariestone\/2011\/09\/13\/tuesdays-with-fannie\/","title":{"rendered":"Tuesdays with Fannie"},"content":{"rendered":"<!DOCTYPE html PUBLIC \"-\/\/W3C\/\/DTD HTML 4.0 Transitional\/\/EN\" \"http:\/\/www.w3.org\/TR\/REC-html40\/loose.dtd\">\n<html><head><meta http-equiv=\"content-type\" content=\"text\/html; charset=utf-8\"><meta http-equiv=\"content-type\" content=\"text\/html; charset=utf-8\"><\/head><body><p>It\u2019s with great excitement that I announce my plan to turn back the pages of time and embrace with boldness all things buttered, creamed, and, by our 21st century standards, totally old-fashioned and unhealthy.<\/p>\n<p>I\u2019m going to spend each Tuesday with <a href=\"http:\/\/en.wikipedia.org\/wiki\/Fannie_Farmer\" class=\" decorated-link\" target=\"_blank\" rel=\"nofollow\">Fannie Farmer.<\/a><\/p>\n<p><a href=\"https:\/\/wp-media.patheos.com\/blogs\/sites\/484\/2011\/09\/dsc_00031.jpg\" class=\" decorated-link\" target=\"_blank\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-632\" title=\"DSC_0003\" src=\"https:\/\/wp-media.patheos.com\/blogs\/sites\/484\/2011\/09\/dsc_00031.jpg\" alt=\"\" width=\"529\" height=\"351\"><\/a><a href=\"http:\/\/wp.production.patheos.com\/blogs\/rachelmariestone\/files\/2011\/09\/dsc_0003.jpg\" class=\" decorated-link\" target=\"_blank\"><\/a><\/p>\n<p>This may mean homemade doughnuts for breakfast.<\/p>\n<p>This may mean finding out, once and for all, what on earth creamed chipped beef on toast <em>is.<\/em><\/p>\n<p>This may mean creating, with my own hands, the dish I fear most of all: aspic.<\/p>\n<p>Oh yes, but it will also mean:<\/p>\n<p><em>Real <\/em>macaroni and cheese<\/p>\n<p><a href=\"https:\/\/wp-media.patheos.com\/blogs\/sites\/484\/2011\/09\/dsc_00531.jpg\" class=\" decorated-link\" target=\"_blank\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-629\" title=\"DSC_0053\" src=\"https:\/\/wp-media.patheos.com\/blogs\/sites\/484\/2011\/09\/dsc_00531.jpg\" alt=\"\" width=\"529\" height=\"351\"><\/a><\/p>\n<p>The chocolate roll. Need I say more?<\/p>\n<figure id=\"attachment_628\" aria-describedby=\"caption-attachment-628\" style=\"width: 529px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/wp-media.patheos.com\/blogs\/sites\/484\/2011\/09\/dsc_0046.jpg\" class=\" decorated-link\" target=\"_blank\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-628\" title=\"DSC_0046\" src=\"https:\/\/wp-media.patheos.com\/blogs\/sites\/484\/2011\/09\/dsc_0046.jpg\" alt=\"\" width=\"529\" height=\"351\"><\/a><figcaption id=\"caption-attachment-628\" class=\"wp-caption-text\">I made this with Mrs. S's jelly roll pan. And her kitchen linens--almost sacred kitchen tools.<\/figcaption><\/figure>\n<p>And connecting with the tastes Americans enjoyed <strong>before the highway system, before long-distance shipping erased the seasons, and before processed foods and endless gadgets made their way into everyone\u2019s kitchens. Oh, yes, and before the \u201cobesity epidemic,\u201d Type II diabetes, and so forth.<\/strong><\/p>\n<p>Last week, my dad remarked ruefully that the only thing we could really speak of as \u201cAmerican\u201d food is fast food. We Americans, we\u2019re used to taking a hard rap for our eating habits. And yeah, if you\u2019ve read any of this blog, you know that I think we ought to be taken to task for some of our nastier habits. But who is motivated to change by being fed guilt-trips?<\/p>\n<p>And who is motivated to change by radically \u201chealthy\u201d diets that sacrifice taste and tradition for the sake of \u201crevolutionary\u201d concepts of health?<\/p>\n<p>But Fannie Farmer? She\u2019s not about health food, exactly, but in her own time she was known for her work in encouraging the sick to eat; she was even invited to lecture at Harvard Medical School. She felt sure that taste, appearance, and presentation had to take precedence over \u201cnutrition\u201d\u2013then a young science, but already a consuming concern. <strong>Food that looks and tastes good, made with care from real and quality ingredients? Yeah. That\u2019s a revolution I can get behind.<\/strong><\/p>\n<p>There\u2019s no way I\u2019m going to try and tackle Ms. Farmer\u2019s nearly 2,000 recipes in a year. And I don\u2019t really want to turn this blog into the \u201cRachel and Fannie\u201d project. (Doesn\u2019t have quite the ring of \u201cJulie and Julia,\u201d does it?) <strong>So this is my plan: to cook from my old editions of the Fannie Farmer cookbook a few times a week and report here on Tuesdays. Hence, Tuesdays with Fannie.<\/strong><\/p>\n<p>Another component of this project is this: my very old, very dear friends, Mr. and Mrs. S. are in a nursing home just a couple of miles away. In her day, she was quite amazing at home cooking in the style of Ms. Farmer. (She\u2019s the reason I know of the chocolate roll, the creamed everything, the dreaded aspic.) In his day, he was quite a champion at dining, and tells the stories of Depression days with brown bread &amp; beans for Saturday dinner and creamed chipped beef on toast during the week. They\u2019re now the people that Ms. Farmer most cared about feeding: \u201cinvalids.\u201d And they really do NOT like the food at the nursing home (and I really do NOT blame them.)<\/p>\n<p>So my plan is to bring them\u2013at least once a week\u2013the kind of dishes they grew up on, cooked according to the wisdom of Ms. Farmer.<\/p>\n<p>And in the process, I hope to learn more\u2013for better or for worse\u2013about the style of cooking that was once considered \u201cAmerican*.\u201d<\/p>\n<p>This\u2019ll be <em>fun!<\/em><\/p>\n<p><em><\/em><\/p>\n<p>{*of course this definition of American is an over-simplification; \u201cAmerican\u201d food has embraced many forms of cuisine, and Fannie Farmer\u2019s is basically New England style.
