A day late around here, but still here.\u00a0 Today\u2019s theme is Dress to Impress<\/span>\u00a0 Company\u2019s coming.\u00a0 What are you cooking to wow them but still have time to look amazing?<\/p>\n

At my house, I\u2019m cooking<\/p>\n

Honey Pecan Glazed Chicken<\/b><\/span><\/p>\n

1 boneless skinless chicken breast pounded to near uniform thickness per person plus a couple extra for the guys\u00a0\u00a0<\/span>
\n3 cups buttermilk<\/span>
\nSeasoned flour (see below)<\/span>
\noil for frying<\/span>
\n
\n<\/b>
\nSeasoned flour:<\/span><\/b>
\n2 cups flour
\n1 tbsp salt
\n1 tbsp garlic powder
\n1 tbsp white pepper
\n1\/2 tbsp cayenne pepper\u00a0 (when the kids aren\u2019t eating with us, I up this to a whole tbsp)<\/p>\n

Honey-Pecan Glaze<\/b>
\n1 stick of butter, melted and clarified (that means you get out the solid fat and salt that gathers in the bottom of the pan when you melt the butter)
\n1\/2 cup pecans, chopped
\n3\/4 cup honey<\/p>\n

Mix all of the seasoned flour ingredients together.\u00a0 Heat oil to 350*<\/p>\n

Dredge chicken in flour, dip in buttermilk, run it through the flour again.\u00a0 Put chicken in oil for 4-5 minutes until golden brown and cooked through.\u00a0 (I wait until it floats.)\u00a0 Remove from oil and place on paper towels to drain.\u00a0 (If I need to keep them warm, I put the chicken on a plate in a 100* oven until they\u2019re all finished cooking.)<\/p>\n

Glaze- Melt butter in a pan.\u00a0 Add pecans and heat together briefly.\u00a0 Add honey and mix well.<\/p>\n

Serve chicken breast topped with glaze.\u00a0 Yum!<\/p>\n
