Ever since VeggieGate 2008 where yours truly was implicated of sneaking sweet potato puree into chocolate fudge brownies mix to beef up it\u2019s nutritional value, the Hubs has never truly trusted my baking. <\/span>
<\/span>\u201cChocolate chip muffins,\u201d I said and went back to working on my computer. <\/span>
<\/span>\u201cWhat\u2019s in them?\u201d he asked poking at one.<\/span>
<\/span>\u201cJust chocolate chips.\u201d I promised. <\/span>
<\/span>He waited a minute and then searched my face for subterfuge\u2013apparently I passed.<\/span>
<\/span>\u201cYou know,\u201d he said through a mouthful of veggie-free (sigh) muffin, \u201cYou could make a good muffin with some bacon and cheddar.\u201d <\/span>
<\/span>Bacon and cheddar\u2026<\/i> I thought. <\/span>
<\/span>Where have I had bacon and cheddar baked in flaky goodness before?<\/span><\/i>
<\/span>My mind began thumbing through it\u2019s breakfast experience rolodex:<\/span>
<\/span>Ah yes, IHop Halloween Face Pancakes with the kids\u2013you were tasty, a bit sweet, but what are pancakes without a sucrose smack in the face? Candy corn and whip cream, you make an interesting couple, but you\u2019re not bacon and cheddar so I must move on\u2026 <\/span><\/i>
<\/span>\u2026well hello Mimosas and Gluten-free Blueberry Muffins with Jen to celebrate our kids\u2019 first day of school. Yeah, you were an interesting combo\u2013not sure if I can get down with gluten-free for the long haul, but Jen liked you, so you\u2019ll stay as a top tier memory\u2026moving right along\u2026<\/span><\/i>
<\/span>\u2026what\u2019s that Chocolate Croissants after an overnight with T.C.? You want to be considered for the role of \u201caverage, down-to-earth breakfast fare\u201d? Sorry, you\u2019re a bit too elegant for the occasion. Bacon and cheddar have a certain humility about them that comes from their modest upbringing as farm boys. No, I\u2019ll save you for the next overnight\u2026promise. On to the next goodie\u2026 <\/span><\/i>
<\/span>\u2026ah there you are Highrock Christmas Concert Cookies! How could I forget you with your warm, gooey, just-out-of-the oven allure? I totally remember you. I especially remember\u2026 the bacon and cheddar scones! Yes that wonderful combination of sweet corn, salty bacon, and the sharp, pungent flavor of the cheese takes me right back to the commons during the concert intermission.<\/span><\/i>
<\/span>From that moment on, I was determined to re-make those scones. <\/span>
<\/span>Now you see, I\u2019m from the South and so my brain does this weird retranslate thing whenever I come across a non-Southern term. So:<\/span>
<\/span>-You all becomes \u201cy\u2019all\u201d even if the person speaking has the furthest thing from a Southern accent.<\/span>
-Soda or Pop becomes \u201ccoke\u201d even if you\u2019re talking about ginger ale, which, incidentally, I\u2019ve only had here in New England.<\/span>
-I\u2019m about to, becomes \u201cfixin'\u201d even though fixing (spelled properly) is actually a verb meaning \u201cto fix\u201d, not a statement of intention. <\/span>
-tea isn\u2019t a hot drink served after dinner. No tea is a cold, tall, condensation slick glass of sweet nectar from the heavens. <\/span>
-and a scone is simply a dressed up biscuit. <\/span>
<\/span>I know, I know, there are fine differences between the two that must be respected. I sure learned to respect them this week. I translated \u201ccheddar bacon scone\u201d for \u201ccheddar bacon biscuit\u201d and got this monstrosity.<\/span>

<\/span><\/a><\/span>I know it looks unassuming, but don\u2019t let it fool you. This little biscuit here is floured regret! It\u2019s dense and bland and SO not what I remembered. <\/span>
<\/span>I was so disappointed when it didn\u2019t come out right. While mixing it up, I was bopping around my kitchen singing my own version of Rosemary Clooney\u2019s sleeper hit made famous by the Chipmunks, \u201cCome On-a To My House\u201d<\/span>
<\/span>Come on a to my house I\u2019m gonna make you biscuits. Come on a to my house I\u2019m gonna give you a cheddar and some corn and a bacon galore!<\/span><\/i>
<\/span>Yeah\u2026things didn\u2019t go to plan. Maybe it\u2019s the mix, maybe it\u2019s the technique, maybe this little biscuit couldn\u2019t handle the pressure of living up to my Highrock memory so it came out gross in protest. I\u2019m not sure.<\/span>
<\/span>But, I\u2019m not giving up. I\u2019m gonna scour the internet for recipes. I\u2019m gonna bug Soul Food Highrockers to give me their secrets. I\u2019m gonna give the scone it\u2019s due respect and try agin for next Sunday. <\/span>
<\/span>As God is my witness, I\u2019ll never be hungry (for bacon cheddar scones) again!<\/span>
<\/span>Don\u2019t come-a to my house (yet) I\u2019ve got a lot of fixin\u2019 to do.<\/span>
