Last week was a hard week. \u00a0Work and life were crammed. \u00a0I caught a cold. \u00a0And my computer died<\/a>. <\/p>\n

The cold was not a minor cold, it gave me aches and pains that felt like evil meany-poo viruses had attacked every cell of my body.<\/p>\n

Although Scott would say it\u2019s my own darn fault that I kept going despite feeling miserable (which is true) \u00a0I also felt constrained. \u00a0A colleague from Milwaukee flew in just for me to mentor her for 2 days\u2013a very enjoyable time assuming I didn\u2019t sneeze and cough her into receiving a Boston gift she never wanted. \u00a0My sister flew in for a day and this was our chance to celebrate her 40th birthday. <\/p>\n

<\/a><\/div>\n

Because my main language of love is food, receiving food and serving food, I kept cooking for the family through it all. \u00a0We\u2019ve been back on the i-diet since January 2nd, so I really dug deep into my kindly heart to make King Ranch Casserole\u2013knowing the kids were sick of non-creamy, non-carbohydrate laden, non-cheesy food. \u00a0Everyone was happy\u2013even Scott, because I also made chicken soup and a really great salad with strawberries and avocados, so we were still eating within reason. <\/p>\n

But when I returned to the kitchen in the middle of kids cleaning, my son was scooping the casserole with big plops into a Tupperware so all the cheese on top mixed with the rest of the casserole and it looked like a huge pile of creamy vomit. <\/p>\n

I couldn\u2019t take it. \u00a0I started shrieking \u201cWhat are you doing to my casserole!!!!\u201d<\/p>\n

\u201cWhat\u2019s wrong? \u00a0I thought I was being helpful,\u201d he said, \u201cI\u2019m putting it away.\u201d<\/p>\n

\u201cWhy aren\u2019t you using a spatula and cutting out pieces so the cheese stays on top and it looks nice?\u201d I continued shrieking. \u00a0\u201cThe way I always do???\u201d <\/p>\n

The kids all looked at me as if I\u2019d lost my mind, which I had. <\/p>\n

\u201cWhat\u2019s the big deal?\u201d<\/p>\n

Wrong words. \u00a0But my kids are getting too old and too wise to deal with their mother melting over stupid things. <\/p>\n

\u201cYou\u2019re sick, we\u2019re cleaning, you should just go to bed,\u201d one of them said. \u00a0They sounded just like their dad.<\/p>\n

Defeated, I slunk away. \u00a0Later, when I said sorry to 2 for yelling, one said I wasn\u2019t forgiven. <\/p>\n

Sigh.<\/p>\n

King Ranch Casserole<\/b><\/p>\n

King Ranch Casserole is a tortilla chicken casserole that\u2019s incredibly yummy and not too unhealthy if you use whole wheat tortillas. \u00a0I\u2019d never heard of it before Moira Goode, the wife of the rector at All Angels who married us, made it for an Urban Project I directed in NYC. \u00a0You\u2019ve never seen such joy as those students and staff scarfing up this casserole. \u00a0When random folks happen into my house and try a bite, they rave about this casserole.<\/i>

Moira says that everything is interchangeable and you can change proportions also.<\/i>\u00a0\u00a0<\/i><\/span>So I often use more peppers and onions to raise the health quotient.<\/i>\u00a0\u00a0<\/i><\/span>I also poke the sauce into the casserole to make sure it sinks in. \u00a0I find that if I use a Costco\/BJs rotisserie chicken, the casserole gets too salty, so I prefer just plain boiled chicken. \u00a0Especially because then I can save the broth for soup that qualifies for the i-diet.<\/i><\/p>\n

4 cups diced cooked chicken<\/div>\n
1 can Rotel diced tomatoes and green chilis<\/div>\n
2 cans cream of chicken soup, or cream of mushroom, or cream of whatever you like<\/div>\n
\u00bd can chicken broth<\/div>\n
1 cup sour cream (I use light)<\/div>\n
1 package (8-10) flour tortillas cut into small pieces (I use Trader Joe\u2019s 100% whole wheat)<\/div>\n
1 Large onion, diced<\/div>\n
\u00bd green pepper diced (or use a whole pepper if you want more veggies in it)<\/div>\n
\u00bd red pepper diced<\/div>\n
1 cup grated sharp cheddar cheese (or more if you like it cheesy)<\/div>\n

  1. Mix tomatoes, soups, broth and sour cream in a bowl<\/li>\n
  2. Layer 9 X 13 pan with \u00bd chicken, onion, peppers, tortillas, repeat the layer.\u00a0 <\/span><\/li>\n
  3. Pour sauce over whole casserole<\/li>\n
  4. Sprinkle grated cheese on top<\/li>\n
  5. Bake 1 hour @ 350<\/li>\n<\/ol>\n
