Enjoying A Day Full Of Giggles, Learning & Growing Together

April 25th is National Take Our Daughters and Sons to Work Day (Take Your Child to Work Day). It is a national day that gives children in the United States a glimpse into the working world. Developed by the Take Our Daughters And Sons To Work Foundation, a 501(c)(3) non-profit educational organization, the day revolves around parents taking their children to work to expose them to future job possibilities and the value of education. It is the successor to Take Our Daughters To Work Day, which was expanded to include boys in 2003. 

 

In the U.S., it occurs on the fourth Thursday in April every year, with more than 37 million Americans at over 3.5 million workplaces participating.

This Berry Parfait recipe is perfect for this holiday. It’s with berries and layered cream!  Happy Eating!

 

Party Berry Parfait

Ingredients

  • 1 1/2 Qt. hulled and quartered Strawberries
  • 2 Cups Blueberries
  • 1 Cup Raspberries
  • 1/4 Cup granulated sugar
  • 1/2 teaspoon finely grated lemon zest
  • 1 teaspoon lemon juice
  • Salt
  • 1 1/2 Cup heavy cream
  • 3 Tablespoons Confectioner’s sugar
  • 1 teaspoon pure vanilla extract

 

Cooking Directions

  1. Toss Strawberries, Blueberries, raspberries, sugar, lemon zest, and a pinch of salt in a large bowl. 
  2. Let it sit for 20-30 minutes, stirring occasionally, until the berries are juicy.
  3. Whip heavy cream, confectioner’s sugar, and vanilla extract in a large bowl until soft peaks form.
  4. Layer the cream and berries in eight 8 oz. jars of parfait cups, dividing evenly. 

Serve.
