If you’ve had gluten free baked goods there is a crackery quality to them. Everything seems like a cracker. Something about gluten helps make things moist. I’ve had some gluten free cakes that don’t suck. However, don’t suck is far away from dick sucking good.
From my experience, gluten free pizza crust can actually be good. I was happily surprised with that little fact.
