A Time For Celebration
St. Patrick’s Day, or as some like to call it, the Feast of Saint Patrick, is a cultural and religious celebration held on 17 March, the traditional death date of Saint Patrick (c. AD 385–461), the foremost patron saint of Ireland.

Saint Patrick lived during the fifth century? He was born in Roman Britain, kidnapped, and brought to Ireland as a slave at the tender age of 16, and would later escape to freedom and later return to Ireland.
He is credited for bringing Christianity to its people. After his death, he was deemed the patron saint of Ireland and its national apostle.

Ham and Vegetables With Garlic Aoli Recipe
Ingredients
- 2/3 Cup Mayonnaise
- 1/4 cup plain yogurt
- juice of 1/2 Lemon
- 1 teaspoon Dijon mustard
- 2 garlic cloves, chopped
- 1/4 teaspoon paprika
- 3/4 pound large red potatoes
- salt
- 3/4 pound carrots, cut into sticks
- 3/4 pound green beans, ends trimmed
- 3/4 pound ham sliced thick
- 4 hard-boiled eggs, peeled and quartered
- Chopped fresh Parsley
Cooking Directions
- Make Aoli: In a small bowl, stir together mayonnaise, yogurt, lemon juice, mustard, garlic, and paprika, and set aside.
- In a large saucepan, cover potatoes with salted water, Bring to a simmer.
- Cook partially covered, until fork-tender (about 20-25 minutes)
- Drain, and quarter.
- In a medium saucepan, cover carrots with salted water. Bring to a simmer; cook until partially done, until fork-tender (5 minutes), and transfer to a plate with a slotted spoon. Cook beans in the water until tender, (6-8 minutes)
- Transfer to plate
- Cook Ham until seared on both sides (6-8 minutes)
- Divide Aoli among 4 bowls.
- Arrange eggs, vegetables, and ham on plates. Garnish with Parsely.
Serve warm, with Aoli on the side
