Earth Day is an annual event on April 22 to demonstrate support for environmental protection. The first Earth Day in 1970 enlightened millions of Americans from all walks of life to birth what we call the modern environmental movement. Since then, Earth Day has evolved into the largest civic event on Earth, enlisting billions across 192 countries to assist in safeguarding our planet and fighting for a brighter future. 

As citizens of the Earth, we should all strive to leave our world much better than we found it for the generations after us. 

What Does The Bible Say About Taking Care of The Environment

There are quite a few Bible verses that remind us that God not only created the Earth but also created us to protect it. He is the creator of the world. According to the Bible, God wants us to study the Earth and the environment.

 The Bible says that to know God and his works, they can be found in understanding plants and animals and the delicate web of life. (Job 12:7-10)

God also commands us to be a steward of the environment. (Genesis 1:26)

Easy Ways To Celebrate Earth Day:

*Here are some easy and unique ways to Celebrate Earth Day. 

  • Scatter native wildflower seeds to promote clean air and the survival of indigenous wildlife.
  • Host a clothing swap or clothing repair party to encourage your friends (and yourself) to recycle old garments rather than buy new ones.
  • Switch out straws from plastic to aluminum or the biodegradable kind.

Spring is here, along with plenty of colorful and healthy fruit and vegetables. In this blog post, I give this pasta a nutritious makeover, combining it with fresh vegetables and just enough pesto to give it a punch! Happy Eating! 

Green Pasta Primavera Recipe

Ingredients

  • 8 oz. dried whole wheat blend rotini pasta
  • 1 bunch Asparagus (about 1lb.) Trimmed and cut diagonally into 3/4-inch pieces
  • 1 Cup all-natural chicken broth
  • 1 Tablespoon all-purpose flour
  • 1/3 Cup prepared pesto
  • 1/2 large red bell pepper, finely diced (1/2 Cup)
  • 1/2 Cup grated Parmesan cheese
  • Salt and Pepper
  • 1/4 Cup Pine nuts, lightly toasted

Cooking Instructions

  1. Cook Pasta according to package directions.
  2. Add the Asparagus during the last 3 to 5 minutes of cooking, depending on the thickness of the asparagus.
  3. Drain and set aside.
  4. Return the pot to the range.
  5. Add the broth and flour and whisk until blended.
  6. Place over medium-high heat and bring to a simmer, stirring constantly.
  7. Reduce the heat and continue to simmer, stirring gently until the mixture thickens slightly, about 2 minutes. 
  8. Stir in pesto until smooth.
  9. Add pasta, asparagus, bell pepper, and Parmesan.
  10. Season with salt and pepper to taste. 
  11. Place in individual bowls, top with pine nuts, and serve.
