I’ve always been a pretty healthy eater. Okay, kind of. Fast food has never been my thing, but if it has sugar in it, I’m all there. But if you know my story at all, you know that I struggled with an eating disorder for years. My idea of food and how to take care of my body was completely wrong and unhealthy. I deprived my body of nutrition and the protein I needed. I can’t tell you how many times I felt weak or tired, and would just shrug it off, or load up on caffeine or something sweet as a treat.

I’m so thankful to be free of that wrong thinking and of so many wrong-eating habits today. It’s only because of the Lord, and His love and identity that He speaks over me.

One of my prayers and deep desires for Kinsley is that she’ll grow up being thankful and confident in who God has made her to be. To know that she’s hand crafted by Him, beautiful and perfectly made, and that she would rest in Him and who she is in Him, and not what the world says she should be.

Okay, I’ll admit, I totally hopped on the organic band wagon once Kins started eating real food. I won’t get into all that, but I will say lately I’ve been a lot more conscience of what we eat, what I buy and what I cook. I want to make good meals that are full of the nutrition that we all need, that give us energy and taste good too!

One of my all time favorite cookbooks so far, is “The Oh She Glows Cookbook” by Angela Liddon. I certainly haven’t tried all of her recipes, but there are a handful of recipes in there that are my go-to.

My go-to snack is her peanut butter cookie dough bites. I keep these in the freezer, and whenever I need a little pick me up, I just pop one with my mouth. These are also Kinsley’s ALL TIME FAVORITE. I make small ones for her without the chocolate chips. She waits at the freezer and lets me know when she wants one. Then she chooses the one she wants, and walks around the house with her mouth stuffed. I love this snack because not only is it delicious, it’s also packed with protein.

Ingredients: (I always double the batch)

1 ½ cups oats

2 Tbs. coconut oil

2 Tbs. peanut butter or almond butter

¼ cup pure maple syrup or agave syrup

1 tsp. pure vanilla extract

½ cup almond flour or almond meal

¼ tsp. salt

2 Tbs. chocolate chips

1. In a blender, blend the oats until it’s like a flour texture.

2. Combine oil, peanut butter, maple syrup, and vanilla and mix until smooth. Add the almond flour, oat flour and salt and mix again until    combined. Add choc. Chips.

3. Make little balls with the dough, and set on a cookie sheet lined with parchment paper.

4. Put in freezer and enjoy!
