Another Yummy Autumn Recipe

My parents were in town this weekend for a quick visit – the boys were away camping and I knew that I would want some company! – and I was looking for a delicious slow cooker recipe for my top roast. My mom is an amazing cook and used to make a great German version of pot roast called “Bohneneintopf,” so I knew that I had a lot to live up to. Here is what I came up with, modified from several recipes that I found:

2 lb. top roast, lean

2 onions, sliced

2 cloves chopped garlic

3-4 potatoes, peeled and chunked

2 carrots, peeled and chunked

3/4 envelope onion soup mix

1/2 c. burgundy wine

1) Place vegetables in the bottom of the slow cooker and the roast on top

2) Sprinkle with soup mix all over, and pour the wine (or beef stock) over the top

3) Cook on low for 8-10 hours

This was delicious, although I must admit that I overcooked the roast and the meat was a bit dry. I always have a hard time with slow cooker recipes – my meal seems to be done in about 1/2 to 3/4 of the time that the recipe calls for, but I can’t switch to the “Warm” setting manually – it has to finish cooking and then switch over on its own. So, I have to turn off the slow cooker before dinnertime, which isn’t a big deal…But one of the main attractions of slow cooker cooking is that you don’t have to think about your meal until you’re ready to serve! Does anyone NOT have this issue with their slow cooker?

In any case, the recipe was yummy and hearty, and all complaints aside, I am very grateful for my slow cooker and the work that it does for me on a regular basis!
