What am I cooking for dinner tonight? Skillet sage and thyme chicken thighs, brown rice, and a green salad. This is simple and easy, a recipe I adapted from several on the internet. Rub chicken with salt and pepper then dredge it in a mixture of flour (1/2C.), salt (1/2 t.), sage (1/2 t.) and thyme (1/2 t.) Heat ~1/4C. olive oil in a pan and fry the chicken until done. Serve over rice with drippings. Yum! My whole family... Read more
The following is a reflection given by Pope Benedict XVI shortly after he was elected to the papacy in 2005. I found it to be very touching, especially as we pray for the cardinals, one of whom will most likely be elected as our new Pope over the next couple of days. Enjoy! “At the beginning of my journey in a ministry that I never even imagined and for which I felt inadequate, all of this gives me great strength... Read more
And only where God is seen does life truly begin. Only when we meet the living God in Christ do we know what life is. We are not some casual and meaningless product of evolution. Each of us is the result of a thought of God. Each of us is willed, each of us is loved, each of us is necessary. There is nothing more beautiful than to be surprised by the Gospel, by the encounter with Christ. There is... Read more
A couple of weeks ago, I had a bit of a health scare. What started out as a simple doctor’s visit turned into a series of tests, waiting, and more tests. I think that I began to worry when my doctor started the conversation with, “Before I continue, you have to promise me that you won’t freak out.” What?! Looking back on the situation now, my fears seem overblown, but I must say that I was truly terrified for a... Read more
One day, when I’m old and gray, I want to look back and remember what it was like to have my 5 little souls at the ages they are right now. Trying to talk on the phone with my sister yesterday afternoon reminded me why my life is crazy and so, so good. I always tell the kids that I love my job and that I’d never trade it for the world. They need to know how much I love... Read more
In the summer of 2002, I had the amazing opportunity to meet and have a shared conversation with Pope Benedict XVI, then Cardinal Joseph Ratzinger, in Rome. I was on a summer fellowship with a group of college students from across the United States, and we finished our time in Europe by making a whirlwind 3-day trip to Italy. Cardinal Ratzinger was gracious enough to grant us 20 minutes of his time, answering our questions and engaging us in a... Read more
What an exciting time in our Church! Of course it is imperative that we all pray for the Cardinals, for Pope Benedict, and for our future Pope. Lent is a great time to make sacrifices for these intentions, and some of my friends have even adopted a specific Cardinal in this time leading up to the Conclave. In addition to prayer, here are a few quick links with educational resources for you and your children– 1) This site provides an... Read more
I’ll admit, yesterday was a very lousy day. It was one of those days where I wanted to crawl into a hole, sob, and just go to sleep. I did a lot of crying, and that always gives me a nice pounding headache. My name, Kellie, means warrior, and so I often look at the sufferings in my life as parts of a great big spiritual battle. Holding onto that analogy, last week ended with some sparring, and this week... Read more
