What am I cooking? The same meal is on tap here almost every Thursday night– roast chicken, a vegetable (tonight it’s spinach), and potatoes.  It’s quick and simple.   What are my weekend plans? We have loved making these Resurrection Rolls in our house for the past couple of years! They are simple and delicious, and the message really hits home for the kids. Is there anything more fun, or cuter, in the world? I think I’ve been looking forward to my son’s first tee ball game since the day he was born. What am I cooking? Not much!  My kids were sick last week and we have been doing lots of sewing and reorganizing this week, which has left meals very simple.  On Sunday I cooked meatballs early in the day so that we could sit down to a big family dinner without much effort in the late afternoon and that was great!  For tonight I just took out some chicken from the freezer, suggestions are welcome.
