Equality For All

 International Women’s Day (IWD) is a worldwide holiday celebrated annually on March 8 and is an integral part of the women’s rights movement. IWD focuses on issues like gender equalityreproductive rights, and violence and abuse against women

The IWD 2024 campaign theme is Inspire Inclusion. When we inspire others to understand and value women’s inclusion, we forge a better world. When women themselves are inspired to be included, there’s a sense of belonging, relevance, and empowerment.

 

The #InspireInclusioncampaign aims to forge a more inclusive world for women and girls.

What Can You Do Today?

Everyone from all walks of life and different cultures can play a part in helping with gender equality. From a wide range of IWD campaigns, events, rallies, lobbying, and performances – to festivals, parties, fun runs, and celebrations – all IWD activity is valid. That’s what makes IWD so inclusive. 

The issues are serious, but we must take a positive approach to the issues that stand in our way. 

Dear God,

Thank you for allowing women to showcase their resilience, strength, and passion. Please help us understand that gender equality does not mean women want to take over but to be seen and validated for the work and efforts they do. Let us all have an open mind and heart when it comes to gender equality. -Amen

This Roasted Chicken with Lemon sauce recipe is a great dish that is easy to make. Whether you are a man or woman, you will be impressed by the short prep and bake time. Happy Eating! 

Roasted Chicken With Lemon Sauce Recipe 

Ingredients

  • 3 Chicken halves (3-4 pounds total)
  • Salt and Pepper
  • 1 1/4 Cup dry white wine
  • 3/4 cup canned reduced-sodium chicken broth
  • 3 Tablespoons Lemon juice
  • 2 Tablespoons chopped fresh Oregano

Cooking Directions

  1. Preheat oven to 425F
  2. Season Chicken with salt and pepper
  3. Place chicken in a large roasting pan with a rack.
  4. Cook chicken (skin side up) until the thermometer is inserted and registers 165F. (45 Minutes).
  5. Remove Chicken and rack.

Lemon Sauce

  1. Pour the juices from the pan into a measuring cup. 
  2. Skim off the fat.
  3. In a pan cook wine over medium-high heat, scraping up the bits, until reduced by a fourth. (4-6 minutes)
  4. Add broth, lemon juice, and pan juices.
  5. Cook until reduced by a fourth, 5 minutes.
  6. Stir in Oregano.
  7. Add water, if needed.

*Should make 1 1/2 Cups

*Serve 2 chicken halves with 1/2 cup of sauce.
