So some time ago — nearly 4 years ago, in my early blogging days, I told you about pumpkin rolls, and shared the recipe, which was lost, then found again in an IKEA prop cookbook.
Yes, these are unsightly. Misshapen. They didn’t rise quite right and I was impatient as it was getting late, so didn’t let them rise as long as they should have, and I pulled them from the oven prematurely, and I didn’t supervise my 10 year old as he was mixing them up while I was cooking dinner last night. But they’re pretty tasty (dangit, I still need to shed this and last summer’s Summer Weight Gain), and, what’s more, said 10 year old is pretty happy to eat these for breakfast and then take another one for his snack at school. (It really surprises me that they’ve still got snacktime in 5th grade, but whatever.)
Mostly, I’m just hoping that I can get him to the point where he can mix these up, set them to rise, shape them, and bake them independently, because I’m getting really tired of buying chips and treats that get eaten almost immediately, or “healthy” snacks that sit forever, and this is at least somewhere in-between. Unless you’re anti-carb, it’s even healthier than banana bread, since it’s got fairly little sugar in it.
So, it’s at least a small Mom Win this week.
