Easy Chicken and Dumplins

Easy Chicken and Dumplins December 2, 2014

This is a quick, easy recipe for the best Homemade Chicken and Dumplins, 
just like Cracker Barrel makes.

I got this recipe from my MIL, who is one of the best cooks I know.  I’ll be sharing two ways to make this recipe, one as written, and another with Homemade Dumplins.

Ingredients:
4 Boneless Chicken Breasts
2 cans Cream of Chicken Soup
2 cans Buttermilk Biscuits
Salt and Pepper to taste

Amped up Ingredients:
Chicken Broth (about 1 1/2 cups)
Homemade buttermilk biscuits (recipe below)

Take the breasts and boil in just enough water to cover the chicken *or* amp it up by adding chicken broth.  
I use my homemade broth I make from saving chicken scraps.
While the Chicken is boiling (about 10 mins), prepare your dumplings.  Using the recipe on the card, open the container of biscuits, flatten or roll them out, and cut into strips.
In an effort to control what preservatives we put in our bodies, I amp it up and choose to make my own dumplings which I find just as easy. I’m working on finding the right Cream of Chicken Soup recipe.
Buttermilk Biscuit Recipe
2 cups flour
4 tsp Baking Powder
1/4 tsp Baking Soda
3/4 tsp Salt
2 TBSP Shortening
2 TBSP butter
1 cup chilled Buttermilk
Mix dry ingredients together. Cut in butter and shortening until crumbly.  Make a well in the center and pour in the buttermilk.  Mix until it’s just blended. Turn onto a floured surface (the dough will be sticky).
*This is also a great recipe for Buttermilk biscuits.  I roll out the dough and cut with 2″ cutter and cook mine in a cast iron skillet for 8 – 10 minutes at 450.
But onto the dumplings!
Once the dough is made, allow it to rest before adding to the soup mixture.
This is a perfect time to shred your chicken.
Once the chicken is cooked through, shred chicken and add back to the water. Add the 2 cans of cream of chicken soup and return to a slow boil.
While that is boiling,  Roll out your dough and cut into strips or squares.  
A pizza cutter makes this quick and easy.
Add the dumplins one at a time, stirring frequently.  The dumplings will puff up initially like in the picture above.  Allow to simmer lightly for 30 – 45 mins. Add salt and pepper to taste, while it cooks and continue to stir frequently.
Serve up and enjoy!  Super easy and delicious.  
We usually have enough for leftovers for our family of four.
