Sometimes we need a quick and easy dinner solution, and we always fall back on our go to meals that seem to be on endless repeat – making our suppertime bo-ring! Are you tired of your typical dinners and are looking for an easy recipe to try? Here’s an easy dish to add some delicious variety to your menu.
Ingredients
- 3-4 large chicken breasts cut in half
- 1/2 cup balsamic vinegar
- 1/4 cup soy sauce
- 1/2 cup honey
- 2 Tbsp olive oil
- 3 tsp chopped garlic (I used store bought in a jar)
- cornstarch and water for thickening
Cut and rinse your chicken breasts. Mix together the vinegar, soy sauce, honey, olive oil and garlic for the marinade. Add the marinade to a plastic bag or covered container and make sure the chicken pieces are thoroughly coated. Then, refrigerate for at least an hour, but preferably overnight.
Once you’re ready to bake, preheat the oven to 350. You can use stone cookware like I did, or use an oven sheet lined with foil. I prefer the stoneware because it offers even cooking with a great non-burning surface.
Place the chicken in your dish and reserve the marinade for the glaze. Bake the chicken for 30 minutes.
While the chicken is baking, transfer the marinade to a sauce pan. You will need to add a thickening agent to make your marinade sauce syrupy. I usually use 1 Tbsp of cornstarch to about 2 Tbsp of water. Mix the cornstarch and water together and then whisk that into the marinade.
Bring the marinade to a boil, stirring consistently. *Make sure the sauce boils to kill off any bacteria that may be left from the raw chicken during the marinading process. Boil for 5 minutes.
Once the chicken has cooked 30 minutes, baste the chicken with glaze and cook another 5-10 minutes or until the chicken reaches 165 degrees.
Doesn’t this look delicious! Both my boys went back for second helpings!
I served this with a side of jasmine rice and steamed mixed vegetables. Quick, easy and and yummy! It was such a nice treat for a change of pace for our old stand-by’s and now this recipe will be definitely added to the rotation!
