“Just Mom and the Kids” Dinnertime Waffles July 9, 2013

On nights when Dad is going to be out for dinner, the kids and I sometimes eat a “silly dinner,” aka breakfast foods at dinnertime. Our favorite combination is waffles, sausage, and fruit, and I have posted my go-to waffle recipe below. It serves up just enough waffles for one mom and three kids, and no syrup is required because the waffles are sweet enough on their own. Enjoy!

Waffles

1 c. all-purpose flour

1/2 c. whole wheat flour

2 tsp. baking powder

7 tsp. sugar

1 1/2 c. lukewarm milk

1 egg

3 T. plain yogurt

2-3 T. canola oil

1 tsp. vanilla extract

1-2 Tbsp. of rainbow sprinkles

Mix the dry ingredients (except sprinkles) in one bowl and the wet ingredients in another.* Make a well in the dry ingredients and add the wet ingredients. Stir in the sprinkles. Refrigerate for 20 minutes if you have the time. Cook in waffle iron. Enjoy!

*I use two Pyrex measuring cups – the dry ingredients go into the 4-cup Pyrex and the wet ingredients go into the 2-cup Pyrex. These are probably my most often used kitchen tools!
