Favorite Recipe Thread!

It’s Memorial Day in the U.S., and I imagine most of you are busy planning picnics—and that means food! I’ve been trying some new recipes lately, so I thought I’d start a recipe exchange of sorts. What have you been cooking lately? What are some particularly easy recipes you’ve enjoyed? Or how about ones that may be harder, but are particularly flavorful and worth it?

I’ve been working to do more with vegetables lately, and as a result I’ve been experimenting with some vegetables I haven’t typically used before, including both kale and tomatillos. I also made some absolutely amazing granola bars the other day, from scratch!

These are all recipes I found on the internet—not my grandmother’s cookbook—but they’re each tried and tested by yours truly! The curry is especially amazing—it works even without the peppers (which I never have).

One other thing! I’d love to see readers share tips they’ve found for eating more vegetables. It’s so easy for me to get stuck on what’s quick, or easy, or conventional, and I’ve realized recently that I’m simply not eating as many vegetables as I want to be. Ideas? Suggestions?
