Greek Bean Salad (Lenten)

Greek Bean Salad (Lenten) April 15, 2005

3 cans Northern beans
1 clove garlic, minced
1/2 cup red onion, chopped

1/4 cup green onion
1/2 cup chopped black olives
salt to taste
pepper to taste
oregano to taste
basil to taste

Dressing: 1/2 cup balsamic vinegar
1/2 cup olive or vegetable oil

Drain beans and rinse lightly. Add garlic, red onion, green onion, black olives and seasonings. Blend dressing and mix into beans. Let marinate at least 8 hours in refrigerator.
