Simplicity in the Burbs ($2 a day): Amazing Life, Amazing Wife! [Day 8]

Yesterday was pretty normal.  I went to work at the church (I am serving part time until I finish seminary) and then had a dentist appointment.  But, as I read many of the comments and emails from all of you yesterday, something became evident: You are all concerned about my health and eating practices.

As you know if you read my first post in this series, I am picky… quite picky.  But, inspired by your concern and that of my wife (who is always concerned), I made sure to add some organic veggies to the mix.  Yesterday, for the first time in my life, I made fried rice.  It included two eggs (for protein), a cup of mixed veggies (which I loath… well, except the carrots), and brown rice.  This actually turned out pretty good and made a wonderful burrito.

For those of you who are wondering if I am getting proper nutrition, let me add that I take a multivitamin and a fiber pill every day as well.  These are both per doctors orders for other issues I deal with.  So, I am feeling decent.  And, I plan to eat more of those pesky beans…

Well, today is an interesting day.  Four years ago, I got married to my amazing wife!  She is my love, my support, and an incredibly gifted and compassionate woman.  She is also smokin’ hot! 😉

Here is my question – What would simplicity have me do to make this day special for her?  I can’t really spend much money, but I want her to know how amazing she is.  Any thoughts?  OR – TELL ME ABOUT SPECIAL DATES YOU HAVE BEEN ON FOR CHEAP!
