Ladies, we are a smart group. So many of you run a home on a strict budget, but manage to serve good, healthy meals to your family while not breaking the bank. I love this, and I’m striving to get better at it!
So I’ve decided, as a way of celebrating our menu maven-ness (why yes, I did make that word up) that there should be a weekly (maybe bi-weekly?) day of sharing a new or favorite recipe. Share the wealth ladies, share the wealth!

What’s Cooking Wednesday?
Creamy Apple-Cinnamon Quesadilla
Prep time: 15 minutes — Start to finish: 20 minutes — 4 servings (2 wedges each)
1 Tbsp. granulated sugar
1/4 tsp. ground cinnamon
1/4 cup reduced-fat cream cheese
1 Tbsp. packed brown sugar
1/4 tsp. ground cinnamon
2 whole wheat tortillas
1/2 small apple, cut into slices (about 1/2 cup)
cooking spray (or butter/margarine)
Directions:
1. In small bowl, mix granulated sugar and 1/4 tsp. cinnamon; set aside. In another small bowl, mix cream cheese, brown sugar, and 1/4 tsp. cinnamon with spoon.
2. Spread cream cheese mix over tortillas. Place apple slices on cream cheese mix on 1 tortilla. Top with remaining tortilla, cheese side down. Spray both sides with cooking spray, sprinkle with cinnamon/sugar mix.
3. Heat 10-inch skillet over medium heat. Add quesadilla; cook 2 to 3 minutes until bottom is brown and crisp. Turn; cook 2 to 3 minutes longer.
4. Remove quesadilla from skillet to cutting board; let stand 2 to 3 minutes. Cut into 8 wedges.
This would be delicious as a weekend breakfast or perhaps a snack or dessert!
