Today (hoy), Tara and I (y yo) decided to make chicken and rice, or in Costa Rica, Arroz con Pollo.
Our friend (amiga) Kathy used to make it back home with us and it was delicious (delicioso). Last Saturday (Sabado), we made it and it came out really good, so we decided to do it again.
Here are the steps to make your own Arroz con Pollo:
- rice cooker
- 6 chicken drum sticks
- 1 red pepper
- 1 onion
- 1 bunch of cilantro
- 1 pack of Sazon y Amor para pollo (kind of like a bullion cube)
- 2 packs of Pollo Completo
- 1 can of peas & carrots
- approximately 3 cups of rice
- Lizano
First (primero), you want to cut the chicken off the bones into little chunks. Save the bones to use for flavor in the rice cooker later. Next, you want to saute the chicken in a little bit (un poquito) of oil and add one pack of the Sazon y Amor.
While you are sauteing the chicken, you want to cut the red pepper, and onion (cebolla). Then, you want to put the onion and red pepper into the rice cooker and pour oil on top and stir it with the rice cooker on until the onion gets soft.
Once the onion and peppers are ready, you want to add rice to the rice cooker and let it sit there and cook 3-5 minutes (tres a cinco minutos) before you put the water (agua) in (a dentro).
After (despues de) the rice is a little bit cooked, you should add enough water so that the water is over the rice. (But not too much.)
Add the chicken chunks in the rice cooker, (If you want more flavor, you can add the chicken bones inside.) Add two packets of Pollo Completo and half of the cilantro.
You should mix it once, put the lid on, and wait for the rice cooker to say it’s done.
When the rice cooker pops to say it’s done, take the bones out and mix in Lizano to taste. (We don’t have Lizaon in the US, but Tara and Jeff think it tastes like a combination of A1 sauce and tomatillo sauce.) Serve with some fresh cilantro.
