Here is the “before” picture for my second Scotch and Science Night, held earlier this week. S&S Night was started because Evan Samsill, manager of the Lynden liquor store, is an evil genius.

Evan sold me a whiskey aging kit made by White Dog Whiskey that included a barrel and two fifths of un-aged White Dog. The problem is, after you’ve aged your first batch, you’ve got to replace it with something. In other words, it’s a perpetual sales machine.

The three bottles in front are previous experiments — pure aged White Dog; aged Glenmorangie; and a mix of Michael Collins, Collingwood and McLelland’s. That’s right, we combined Irish, Scotch and Canadian whiskeys. The result is a unique flavor that I’ve decided to call “Extinction.”

The cause for our celebration — the mix that we were taking out of that barrel — was a new mix of White Dog and Elijah Craig. It was well received and, I would estimate, the second most successful batch of science. Our next experiment involves White Dog and Snake River.
