Cajun Maque Choux

This is one of the kids’ favorite and I make it every Thanksgiving.

6 slices of bacon

1 sweet onion, finely chopped

1 red pepper

1 jalapeno, finely chopped

3 gloves garlic, chopped

4 c. corn

2 c. chopped okra

2 tomatoes, chopped.

1/8 cayenne pepper

1/2 tsp. cajun seasoning

1 cup chicken broth.

Cook bacon until crisp. Drain bacon on paper towel. In bacon grease sautee until tender onion, bell pepper, jalpeno and garlic. Add chicken broth, bring to a boil. Add corn, okra, tomato, seasonings. Reduce heat to medium, cook for approx. 45 mins or until most of the liquid is drained away. Remove from heat. Crumble up the bacon and use as garnish. Serve. Mmmmgggooodd.
