Happy Ramadan, Day 3.

Last night we finished off the Moussaka, and I assembled the breakfast casserole to bake.  Not having ever made this type of food before, I didn’t know it’s supposed to rest overnight before baking.  It might just be our dinner today, with a nice salad.  I’m still working that out.

So, after I assembled the breakfast casserole, I made the rest of the sausage into patties and fried them up with the thought that they would be perfect on a bun or english muffin with an egg and cheese for quick breakfast food.  My DS (who is 12) ate the whole plate of sausage after his meal and dessert.  LOL  I will probably mix up some more today to accompany the casserole.  I might make foul medames too.  That’ s usually our brupper food, something for the kids and foul for the adults.

Wait, you say, “Mix it up?”  yes, I bought some ground chicken and turned it into breakfast sausage.  It’s dead easy if you have a spice cupboard and pre-ground meats.  Here’s the base recipe from Food.com (formerly recipezaar.)

Ingredients:

Directions:

  1. Combine all ingredients (use less pepper if you don’t want a spicy taste) and blend well.
  2. If time permits, refrigerate overnight to let the meat absorb the flavor of the spices.
  3. Form into patties and cook as needed, freezing leftovers.
  4. Don’t overcook or they will dry out–remove from the heat as soon as they’re no longer pink inside, but still juicy. (if you prefer a moister texture, you add a splash of olive oil or an egg to the mixture just prior to cooking).

Those aren’t my notes, I cut and pasted the recipe.  Don’t make a HUGE batch the first time out of the gate because you will adjust the amounts of spices to your family’s taste.
