This week I loved Tom Philpott’s response in Mother Jones to Mark Bittman’s piece in the New York Times. Both guys are in favor of reducing America’s meat consumption for the sake of the health of people, animals, and the planet.
But Mark Bittman is not opposed to “tofurkey” type industrial meat replacers and Tom Philpott is (as I think I am). HOWEVER, Philpott points out that there are traditional, yummy, real-food meat replacers–like tofu, seitan, tempeh, and falafel–that, prepared well, we all could love.

I love falafel. Deep fried chickpea balls? With yogurt sauce? And pita? And veggies? And pickles? And french fries? Toodelish.
FOOD THAT’S GOOD FOR THE PLANET CAN BE BLISSFULLY DELICIOUS!!!
Plus, nobody is motivated to eat better because of the abstracted, intellectual rightness of the thing. NO! It’s gotta make your eyes roll back in your head from the tastiness of it.
{excellent falafel recipe here. and don’t try to bake them or something! they must be fried! and then you should tuck them into pita pockets with shredded iceberg lettuce, pickle slices, tzaziki, and french fries. i’m not even kidding about the french fries.}
