What Are You Having for Breakfast? Try a Delicious Lo-Carb Scramble April 7, 2015

Need to drop a few pounds? I’ve got a breakfast recipe that can do just that.

It’s a egg white scramble with grilled chicken, asparagus and mushrooms. It doesn’t take Chef Bobby Flay to make this delicious breakfast. Here’s what you do:

1.  Dice 3 mushrooms (doesn’t matter what kind) and cut two thick asparagus spears into little pieces. 

2.  Sauté the mushrooms and asparagus over medium heat with a teaspoon of coconut oil (healthy fat). 

3. As you begin to sauté the mushrooms and asparagus, prepare a grilled chicken breast as well. 

4. Once the mushrooms and asparagus start to brown, pour in 4-6 egg whites into the pan and scramble them.

5. Top the scramble with 3-5 oz of chicken and you’re done. Easy as that.

Why did I choose these 4 ingredients?

Egg Whites: Great source of casein (time released) protein. 

Asparagus: Loaded with nutrients, antioxidants, and it’s a natural diuretic (you won’t retain a lot of water weight). 

Mushrooms: Contain additional nutrients, antioxidants, and fiber. 

Grilled Chicken: high protein, low fat source of meat protein which contains amino acids (provide energy and create new proteins).

*This is definitely a low carb meal. If you want to add carbs for additional energy, you can add 4-6 oz of sweet potato.
