A Better Baked Oatmeal

I shared this baked oatmeal recipe with y’all a while ago, but someone recently sent me a slightly different recipe from the foodie site Cast Sugar, and I like it even better – less sugar, less fat and no baking powder!

2 1/4 c. quick cooking oats (or 2 3/4 c. old-fashioned oats)
2/3 c. firmly packed brown sugar
3/4 c. raisins or other dried fruit (I used dried goji berries)
1/2 c. chopped walnuts
1 tsp. cinnamon
1/2 tsp. salt
3 1/3 c. skim milk
4 egg whites, lightly beaten
1 tsp. veggie oil
1 tsp. vanilla extract
Milk, yogurt, sugar, and/or fruit (optional; for topping)

See the rest of the recipe here and do look around the Cast Sugar site – some marvelous-sounding recipes there! I intend to try her Oatmeal Breakfast Bread next. Yes, I like oatmeal, you got a problem with that?

I’m not so sure I would mess with the perfection of the original baked oatmeal recipe I got from your blog! I made several batches of that for Christmas gifts this year, and attached some “coupons” for more baked oatmeal. The requests are coming in right and left for the next pan of baked oatmeal, as well as for a refill on my hot chocolate mix.
