Thirsty Thursday…

… I’ve found something to rival Pennsylvania Dutch Eggnog. I know! Cocquito, the Puerto Rican version of eggnog.

2 15-ounce cans cream of coconut
2 14-ounce cans condensed milk
6 ounces white rum (more if you like)
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/8 teaspoon ground nutmeg
1 teaspoon coconut (or vanilla) extract

Mix it all up in a blender and refrigerate for about an hour before serving. Feliz Navidad!

I’m bookmarking this for when I decide to break that whole healthy eating New Year’s resolution thingy!  Thanks!  Merry 12th Day of Christmas!

I don’t like eggnog, but I’d bet I’d love that!  Thanks for sharing!!!  OH, and Hau’oli Makahiki Hou!  (Happy New Years – in Hawaiian).

I just finished off the last of the coquito, this means Las Navidades are officially over. Okay, not really.
Tomorrow is el Dia de Los Reyes Magos!

Sounds great to me – I could do with out the cloves and nutmeg though.  I’d add more rum too.

Wife saw me reading this post, said ‘that sounds good!’ so made a half recipe – good!

How long does it keep? Don’t know if just the 2 of us can drink it all today – not so much the alcohol as the Calorific Vision.
