Sarah at This Heavenly Life asked for soup recipies just as I was going to post my own!
This was a vegetarian recipe that I tweaked and changed for my own use. It makes a lot, probably enough for 8? It is still my favorite soup of all time, wonderful flavour, and it actually fills you up.
Put:
1 cup sliced or chopped celery
2 cups sliced carrots
10 cups sliced unpeeled potatoes
About 8 cups of water.
together in a large pot and bring to a boil. Cover, reduce heat and simmer until celery and carrots are tender.
Fry:
2 medium onions sliced or chopped
1 pound ground beef
4 crushed cloves of garlic
together in a frying pan, drain the grease and add to the pot of vegetables and water.
Add:
3 cups milk
1 Tablespoon salt
1 teaspoon pepper
1 Tablespoon dried parsley.
Boil for a few more minutes and serve hot. This soup is amazing with dipping biscuits!
