Quick Takes #13

1.

When you really want junk food, but its the end of the month so you have no money and very little food left in the house, Here is a dish you may be able to make. Pub Nachos! Its just sliced potatoes, layered with any kinds of peppers and onions and cheese you may have around, and in this case the leftover taco meat we had in the fridge. Then I baked it for awhile. These were amazing and very satisfyingly greasy and cheesy.

Earlier in the week while helping my 3 year old dress for the day, she insisted that her pajama shirt needed to “stay on”. I figured that it was no big deal, she could just wear it under her clothes, it was kind of like a long-sleeve undershirt anyways. That night she just took off her daytime shirt and “Tada!” she was now in her Pajama shirt. But then the next day she didn’t want to take it off either. “It’s no dirty yet mama” she would tell me seriously. I’m not sure how long that favorite shirt would have been worn if it had not been for bath-time that day, where the shirt mysteriously disappeared and new pajama’s had to be found.

My 7 month old is standing. Yes, you read that right. I have a crazy child who insists on pulling herself up on chairs and tables and the couch, or people, or whatever else is handy. I am constantly watching her, trying to catch her when she stands up so she won’t fall, but it seems like every time I turn around she is standing (very unsteadily) and hanging on for dear life to the chair or whatever. I cannot believe this, and hope that she will not get to many bruises from standing up and falling over and over and over.

4.

The same day we had Pub Nachos we really wanted a dessert. What can you make when you don’t have a whole lot of resources? A Coconut Pie. (Yes this was a very unhealthy meal.) I made a instant crust out of corn flakes and sugar and butter, and then made a pudding with milk, egg yolks and sugar and added coconut. Then whipped the egg whites into the meringue for the top and baked it. Let me tell you, it was delicious. And just so you know, our Junk food cravings have been satisfied ever since.

5.

I really need to tackle sorting all the clothes over here. Not only are we getting close to being able to switch seasonal clothes, all 3 of my children as in the middle of switching sizes. Consequently it feels like an overwhelming task. There has got to be an easier way to keep track of who needs what clothing when.

I read this poem a while back and liked it, so I thought I’d add it here:

Things have felt pretty moody over here for some reason. We’ve had some really great days and some really down days all in the same week, I’m suspicious that its really just a lack of sleep. And maybe the change of the seasons making everybody crazy. Hoping things even out a bit this next week!
